Ginger lime marinated salmon




Ingredients:


  • 2 salmon fillets (125 g each)
  • Red chili
  • Juice of 1 lime
  • 1 tbsp fresh orange juice
  • 1 piece of fresh root ginger (grated)
  • 1 spring onion (sliced)
  • Green beans
  • Salt and pepper


Directions: 


  • Mix together the chili, orange juice, lemon juice and ginger ; add the salmon fillets and marinate in the fridge for one hour
  • Steam the green beans
  • Heat a grill pan until hot and add the salmon , cook for 2 min each side until just cooked
  • Place the salmon on top of the beans on two plates and spoon over the marinade
  • Top with spring onion


Note: this dish was served with kelp noodles (found them at Coop) and this is optional. The kelp noodles are healthy and have only 6 calories per serving.
