Ingredients:
- 2 salmon fillets (125 g each)
- Red chili
- Juice of 1 lime
- 1 tbsp fresh orange juice
- 1 piece of fresh root ginger (grated)
- 1 spring onion (sliced)
- Green beans
- Salt and pepper
Directions:
- Mix together the chili, orange juice, lemon juice and ginger ; add the salmon fillets and marinate in the fridge for one hour
- Steam the green beans
- Heat a grill pan until hot and add the salmon , cook for 2 min each side until just cooked
- Place the salmon on top of the beans on two plates and spoon over the marinade
- Top with spring onion
Note: this dish was served
with kelp noodles (found them at Coop) and this is optional. The kelp noodles
are healthy and have only 6 calories per serving.
