Ingredients:
- 2 lobsters
- 1/2 stick butter, melted
- 2 tbsp, chopped fresh parsley
- 5 cloves fresh garlic smashed
- Salt and black pepper
- Olive oil
- 1 tbsp white wine vinegar
- 1 lemon
- Mixed lettuce
- Asparagus
- 2 fresh carrots
Directions:
- Preheat oven to 200 degrees.
- Mix the butter, parsley, garlic and season with salt and freshly ground black pepper, set aside while you prepare the lobster.
- Place the lobster halves flesh side up in a roasting tray. Top with the mixture. Sprinkle with olive oil and season with salt and pepper. Bake in the hot oven for 30 min until the top is golden brown if the lobster is fresh. (If already cooked, preheat oven 180 degrees and bake for 10 min)
- Steam the asparagus, drain and refresh in cold water
- Place the mixed salad in a bowl together with the asparagus and thinly sliced carrots. Whisk with olive oil, white wine vinegar, salt and pepper.
- Serve with fresh lemon wedges.
