Scallops with pea purée



Ingredients:


  • Scallops:
  • 6 scallops
  • 1 tbsp of olive oil
  • 1tsp of butter
  • 1/2 lemon
  • salt
  • black pepper
  • bacon
  • Pea purée:

  • 1-2 shallots, very finely diced
  • 1 tsp minced garlic
  • 1 tbsp of oil
  • 400g of frozen garden peas
  • salt
  • 200ml of milk


Directions:


  • Heat in a pan the olive oil and add the shallots, once soft add the peas, garlic, salt and milk and cook for few minutes. Poor out the milk and bled the rest in a mixer.
  • To prepare the scallops, heat in a pan the olive oil and a bit of butter, medium heat, cook for two minutes each side, season with salt, pepper and lemon.
  • Prepare the crispy bacon both for decoration and taste.
  • Spoon some pea puree on the plate and arrange the scallops on top, decorate with bacon.
