Pea shoots salad with lemon vinaigrette



Ingredients:

  • 1/2 tsp lemon zest
  • 2 tsp lemon juice 
  • 1 clove garlic, minced
  • 1/2 teaspoon white wine vinegar
  • 1 tbsp olive oil
  • Salt and pepper
  • a bunch of pea shoots
  • 1 tbsp shaved parmesan

Directions:
  • In a small bowl, whisk together the lemon zest and juice, garlic, and vinegar, oil and salt to taste
  • Place the pea shoots in a large bowl mixing with the shaved parmesan, add vinaigrette and a bit of pepper. Serve
