Ingredients:
- 1/2 tsp lemon zest
- 2 tsp lemon juice
- 1 clove garlic, minced
- 1/2 teaspoon white wine vinegar
- 1 tbsp olive oil
- Salt and pepper
- a bunch of pea shoots
- 1 tbsp shaved parmesan
Directions:
- In a small bowl, whisk together the lemon zest and juice, garlic, and vinegar, oil and salt to taste
- Place the pea shoots in a large bowl mixing with the shaved parmesan, add vinaigrette and a bit of pepper. Serve
