Avocado toast



Ingredients: 


  • 2 avocados
  • 1 lemon (zest and juice)
  • Fresh parsley
  • 6 cherry tomatoes
  • Two slices of dark bread
  • Olive oil and salt


Directions: 

  • Mash the flesh of the avocados with a fork and season with lemon zest, juice, parsley, oil and salt.
  • Cut the tomatoes and season with the remaining lemon zest and juice, oil and salt.
  • Toast the bread and arrange on the plates, add the avocado mixture and sprinkle with the tomatoes and some parsley.
