Ingredients:
- 2 avocados
- 1 lemon (zest and juice)
- Fresh parsley
- 6 cherry tomatoes
- Two slices of dark bread
- Olive oil and salt
Directions:
- Mash the flesh of the avocados with a fork and season with lemon zest, juice, parsley, oil and salt.
- Cut the tomatoes and season with the remaining lemon zest and juice, oil and salt.
- Toast the bread and arrange on the plates, add the avocado mixture and sprinkle with the tomatoes and some parsley.
